Stage one
Into the cask room
Single-malt whisky casks, in rows, in the dark. Each one holds a beer that was not finished when it went in.

The long wait
Time does the work the kettle cannot. The cask gives back what the whisky left behind.

Night side of the range. Finished in a single-malt cask like every label here — the cask is the last third of the recipe, not a flourish at the end.

Day side. Brewed for the hours when the doors stay open and nobody is checking the time.

Day side. This is the one that goes down to the dock with you and comes back up empty.

Night side. Named for the hour it belongs to rather than for anything in the glass.

Night side. Poured by the glass, on site only — what is open depends on what is ready.

Poured straight, on site. The pour, the condensation, the settle.

How it is made
Aged in whisky casks
Every beer here finishes in a single-malt whisky cask. It is a slow way to brew and a slower way to sell, and it is the reason the range is small. The cask is not a finishing touch — it is the last third of the recipe.

Two ways, and only two
The mixed pack
Ten bottles — two of each. The range is not split up, because the point is the comparison.
By the glass
Straight from the cask, on site only. What is open depends on what is ready.
Tasting flights are poured and talked through by whoever is brewing that week.
Not drinking tonight
There is a full list for you too
The bar keeps a proper non-alcoholic list — built, garnished and named with the same care as everything else, in both day and evening. Designated drivers are looked after, and nobody has to explain themselves.
